Racking : Focus on the winery in Meursault
This year, thee crop was very qualitative and the vintage 2015 is extremely promising in Burgundy. Grapes macerate in the vats since several days. The maceration time will influence the structure of the red wine. A short vatting generates lighter wine while a longer vatting gives more structure to the wine. The wines are tasted regularly during the vatting to choose the perfect day for the racking of each appellation.
We have just finished the racking of our Bourgogne Hautes Côtes de Nuits.
After 16 days of maceration in vats, this red wine have some delicate red fruits aromas and all the needed phenolic compounds. The solid part is composed by stems, skins and pips. This part is separated from the liquid part, the wine. After the free-running juice has been taking out the vats, we put the solid parts outside with a fork (racking). We press it after to obtain a press wine (pressing).
The wines is barreling-down in oak barrels in our cellars : aging will last few months. Our Bourgogne Hautes Côtes de Nuits, as all of ours great wines of Burgundy, will obtain now all their finesse and complexity.
